After several unsuccessful attempts at making a chocolate fudge alternative, I decided to give peanut butter fudge a try. I have been looking for a healthy alternative to satisfy my sweet tooth when I get one. Something that’s easy to make, from ingredients that I have on hand all the time, and that my family would like as well.
The ingredients I used were sunflower seed butter (since I’m allergic to peanuts), coconut oil, and raw honey. That was it! I made a small batch to make sure it was good before wasting the expensive stuff, so this only made twelve very small pieces. You may want to adjust the recipe to make a larger batch.
Recipe:
- 1/2 cup coconut oil
- 1 cup sunflower seed butter
- 1/3 cup honey
- Melt the coconut butter over low heat in medium saucepan.
- After completely melted, remove from heat and add coconut oil, sunflower seed butter and honey to small food processor or blender, mixing until ingredients have blended together.
- Pour into dish and place in freezer until set.
- Remove and enjoy!
While I didn’t use a recipe, I did find one later, and I’m definitely going to have to give this one from The Spunky Coconut a try!
Verdict: Good, but not quite awesome. Work in progress!
